Guy Fieri is cooking a massive Thanksgiving dinner — and then equally big meals on the days that follow.

The Food Network star and his wife Lori are hosting 60 people at their ranch in Northern California from Wednesday through Sunday, Guy told PEOPLE leading up to the holiday. That means, lots and lots of food.

"It's a hot mess up at the ranch. I ordered up four turkeys, two prime ribs, two hams. I got to cook for a week," says the owner of Flavortown Laser Titanium Cookware. "There's taco night, then we have Thanksgiving, then we have lasagna-prime rib night, then we have Chinese food night, which we make it all because we're up there in the hills."

"So yeah, everybody's all hands are on deck," he adds with a laugh.

Everyone staying — especially Guy and Lori's two sons, Ryder, 18, and Hunter, 28 — have a job to do.

"We make the turkey stock, the stuffing. We smoke a turkey. We roast two turkeys. There's steps going along the way. So if you wake up late and you don't make the cooking brigade in the morning, you are definitely on the dish team that night," says Guy.

Plans were made even more complicated by the weather — Northern California had a rare flash flood alert on Nov. 22. After a series of rainy days "you start to build up water. Once the ground gets saturated, it starts to run," says Guy. "Our big rivers and everything here around the wine country are all starting to fill up. So everybody's pretty worried."

"It's going to be a lot of indoors at the ranch," he adds of their Thanksgiving plans. "Fortunately the outdoor kitchen is pretty covered."

It will be hard to top Thanksgiving in 2023. At the time, Hunter proposed to his girlfriend, pickleball pro Tara Bernstein. The two have been busy wedding planning ever since.

"Tara has good values and is just a really great person so I couldn't be happier for Hunter,” Guy previously told PEOPLE. “This is a big deal. To see him this happy and also to see him have a partner that is as driven as he is, it's perfect."
