Go slow with the aubergine. You don't want to overcrowd the pan or burn it. You want to gently cook it in plenty of oil so that they turn deeply golden and slightly crispy all over. Just try not to eat all of them before they make it into the pasta!

Potatoes Au Gratin is a creamy decadent dish that no matter how hard we try, we can never give it up. This version made with cauliflower let's us have the decadence without the guilt. Blanching the cauliflower first will start the cooking process so you don't end up with dried-out, undercooked cauliflower. Just make sure to dry the cauliflower well before layering it into the sauce so you don't end up with a watery mess!
