In this episode of In The Know Cooking: Kitchen Etc, content creator and chef, Tway Nguyen (@twaydabae), tests out the spongy, colorful viral cloud bread trend taking over TikTok—and the end result isn’t all sunshine and rainbows!
30g of sugar
10g of corn starch
2 cups of heavy cream
8 oz of strawberries
30g powdered sugar
Preheat the oven to 300°F.
Start by separating the egg yolks from the egg whites. Then, using a hand mixer, whip the egg whites until frothy.
Add sugar and corn starch to the egg whites mixture.
Continue to whip the meringue mixture into stiff peaks and once it’s done, separate it into two bowls.
Mix a few drops of the food coloring of your choice into each bowl.
Line a baking tray with parchment paper and pile the mixture onto the tray, forming a mound. Keep as much air as possible in the meringue as you shape it.
Bake for 25 minutes at 300°F.
While the cloud bread bakes, make strawberry whipped cream by slicing the strawberries, then crushing them using a mortar and pestle.
Start whipping heavy cream, adding powdered sugar when it begins to thicken. Keep whipping until soft peaks form.
Fold the crushed strawberries into the cream.
Once the cloud bread is done, plate it with a smear of lemon curd, topped with the strawberry whipped cream and dig in!
