When it comes to over-the-top treats, nothing beats carnival fare.

Every state fair has it's own selection of snacks that pay homage to the area, and they're often times on a stick or dropped in the fryer.

The Los Papas Locas from Tennessee Tatercakes are, well, crazy. The sweet potato tots topped with pulled chicken, beans, corn, cotija cheese and avocado sauce are just one of many stacked potato options. Aug. 15-24

Jimmy's Famous Seafood's fried egg roll are stuffed with cream cheese and crab cake and drizzled with mango ponzu and spicy mayo. The handheld bites were crowned the state fair's best savory new food item last summer. Aug. 22-25, Aug. 29-Sept. 2

Fry-Stuffed Milkshake

For a sweet-salty bite-slurp, Route 66 Pizza is the spot for you. Their chocolate shake is rimmed with Fruity Pebbles cereal and topped with French fries so fans can dip in-between sips. Aug. 30-Sept. 22

Dole Whip in a Whole Pineapple

Great New York State Fair in Syracuse

The beloved Disney staple, a soft serve dessert made with frozen pineapple instead of dairy, gets supersized and served in a fresh, cored fruit at Tropical Delights. Aug. 21-Sept. 2

Hot Cheeto Chicken Sandwich

Arizona State Fair in Phoenix

The radioactive red-colored sandwich has won “Best in Show” for other fairs, which doesn't come as a surprise when Biggy’s fried chicken is doused in melted cheddar cheese and covered in Flamin' Hot Cheetos crumbs. Sept. 20-Oct. 27

Dill Pickle Cheese Curd Tacos

Minnesota State Fair in Falcon Heights

Richie’s Cheese Curd Tacos is serving up just what their name implies, but with a kick. Deep-fried tacos are filled with dill-flavored cheddar cheese curds and topped with raspberry chipotle sauce and a little lettuce for a spin on the cheesy midwestern product. Aug. 22-Sept. 2

Ice Cream Nachos

The ice cream nachos from Dippin Mervs are like a deconstructed ice cream sundae. Waffle cone "chips" are coated in caramel sauce and ice cream so there's no spoon required. Aug. 8-18
