Cinnamon Doughnut Muffins

As the days are getting shorter and colder, we could do with a few treats in our lives! These cinnamon doughnut muffins are the perfect sweet snack to eat snuggled up on the sofa with a hot drink. They take no time at all to make and even less time to eat! Read on to check out the recipe…

You Will Need

For the batter

200g of Self Raising Flour

120g of Caster Sugar

150g of Melted Butter

200ml of Milk

2 Eggs

1tbsp of Ground Cinnamon

For the coating

20g of Melted Butter

50g of Golden Caster Sugar

2 tbsp of Ground Cinnamon

To Make

  • Place the flour, cinnamon and sugar in a large mixing bowl

  • In a separate bowl, whisk the eggs and milk together then transfer to the large mixing bowl

  • Add the melted butter and fold together until the mixture resembles a batter

  • Line a muffin tin with cupcake cases and fill with the batter until they are around ¾ full

  • Bake at 180 ° for 20 minutes or until golden brown

  • Whilst the muffins are baking, prepare the coating by mixing all the ingredients together in a bowl

  • When the muffins are cooked, immediately take them out of their cases and roll them in the coating, leaving them on a cooling rack
