If only this goddamn summer would actually behave itself and start being summery we could dust off the barbie and get busy with some al fresco cuisine.

On second thoughts we probably should’ve published this in April when we had that one week of sun. Remember that? Good times.

Who would have thought the entire month of June could be such a colossal let down, eh? But there’s hope still, right? Right?!

In fact, why not just defy this weather and get the barbie out anyway.

Here are some delicious healthy alternatives to get your party started.

Grilled asparagus

So simple and so delicious. Trim the bottoms off, toss in a little olive oil, season with salt and pepper and grill for 2 - 3 minutes.

Kebabs

Tofu, prawns and chicken breast all make tasty low fat kebabs. Alternate them on skewers with peppers, mushrooms and courgettes, for the perfect balance of protein and fibre. Give them a lick of teriyaki and chuck ‘em on the barbie.

Monkfish kebabs

The meaty texture of monkfish makes it perfect for kebabs. Alternate with pieces of mango then act like it was just a little somethin’ somethin’ you chucked together at the last minute.

Salmon muther f***ers

Stick a fillet of salmon into a foil parcel. Slice half a lemon and layer over the top, squeeze the other half over the fish. Season with salt and pepper, carefully close the parcel and refrigerate over night. Barbecue the parcel for around ten minutes. Serve with natural yogurt, crunchy salad and crusty bread.

Celery & almond butter

Cut celery into four inch segments and smear almond (or peanut) butter into the crevice for a delicious high protein snack to munch on while you’re waiting for the food to grill.

Jacket potatoes

For a delicious no full accompaniment, prick some potatoes, wrap individually in foil and place directly on the coals for around an hour while you set about cooking the rest of the food.

Jazzed up corn on the cob

The humble corn on the cob is a super easy and satisfying accompaniment to any bbq. Try smearing it with low fat basil vinaigrette and parmesan. Recipe here.
